Minestrone Soup


Ingredients: (yield 3.84 litres)
240ml Olive Oil
454g Onions - Thinly Sliced
454g Carrots - Peeled & Small Diced
454g Celery - Peeled & Small Diced
510g Russet Potatoes - Peeled & Small Diced
680g Zucchini - Small Diced
340g Green Peas
3.84litres Chicken Stock
454g Tomato/Plum Tomato with Juice

Salt & Black Pepper Grounded to Taste

Steps:

1) In a large soup pot, heat oil over low heat. Sweat onions till wilted & soft. Cook carrots for 3mins.

2) Add vegetable in the following sequence: Celery, Potato, Zucchini and Green Peas. Allow each to soften before adding the next. (don't brown the vegetables)

3) Add Chicken Stock & Tomato Paste.

4) Partially cover & cook at a low simmer for at least 3 hours. Add more soup if necessary.

5) The soup is ready to be served hot.
