Prawn Toasts


Ingredients:
250g Raw Prawn Meat
1 Garlic Clove, Crushed
2 tbsp Chopped Spring Onions
1 tsp Grated Fresh Ginger
1 tsp Sugar
1 tsp Sesame Oil
3 tsp Cornflour
2 tsp Finely Chopped Coriander Leaves (Chinese Celery)
1 tsp Grated Lemon Zest
8 Slices White Bread, Crusts Removed
2 tbsp Sesame Seeds, to Sprinkle
Oil for Frying



Steps:

1) Put prawn meat, garlic, shallots, ginger, sugar sesame oil, cornflour, coriander, lemon zest & 1tsp of salt in the food processor and pulse till the mixture is smooth and well mixed.

2) Cut each slice of bread into 1/4 and spread the prawn mixture thickly on each square.

3) Sprinkle with sesame seeds.

4) Fry in a frying pan with 1cm depth of oil.

5) fry the prawn side until golden brown then quickly turn and fry the bread side.

6) Serve while hot.
